These are my favorite chocolate chip cookies, a combination of 2 different recipes plus my own tweaking. They are soft when cool.
1/4 cup butter
1/4 cup shortening
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
1 tsp vanilla
3/4 cup oat flour
1 3/4 cup all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 1/2 cups chocolate chips
Combine butter and sugars until creamy. Add eggs and beat well, then add vanilla. Add flours, soda, and salt all at once, mix well, then add chocolate chips. Bake at 375 for 8-10 minutes or until brown.
NOTE: I routinely grind my own wheat, so to make the oat flour I just run some rolled oats through the grinder. I haven't tried it, but it might be possible to make oat flour in a blender or food processor too. You can use all-purpose flour for all the flour in this recipe if you want, but adding the oat adds a little extra flavor to the cookies.

It's Austin here--I can't comment under my Google Account when set up this way. :) I just had to say that I LOVE your recipes because they're so health-conscious! They're all of the yumminess of "normal" recipes, only with a healthy kick to them. :) I can't wait to try these! I need to dust off my wheat grinder (which I've never used!!!) and make some of these!
